I cheated this year. . . instead of making English Toffee, I made these. They're faster because you don't have to make a "crust" you just use saltines.
1 column saltine crackers
1 cup butter
1 cup brown sugar
1 12 oz. pkg. chocolate chips
Lay saltine crackers on a foil-lined cookie sheet. In a heavy saucepan, bring butter and sugar to a boil. Boil 3 minutes stirring occasionally. Pour mixture over crackers. Bake 7 minutes at 400. Remove from oven and immediately sprinkle with chocolate chips. Once chocolate has melted, spread evenly. Let cool. Break into pieces. Store in an air-tight container.
